Wedding Cakes from Dexter's Bakeshop Wedding Cakes

Dexter’s profession was in education, but his passion was in sugar. A self-taught man, he read and practiced the art of cake making. When not busy with his professorial duties at the university, he would dabble in sugar crafting, making sugar flowers and centerpieces, then moving on to making the actual cake.

Years had passed and he eventually pursued his dream by opening his first bakeshop in his hometown of Bulacan. His earliest creations were wedding and birthday cakes that were characterized by their fine royal icing and their spectacular sugar decorations. Word of this sugar genius spread, and in no time, customers from as far as the capital city were flocking to Dexter’s to bring home his unique cake creations.

This inspired him to open his first bakeshop in the city in the early 70’s. The venture was a success as he soon became the preferred source of special occasion cakes. People were drawn to the workmanship, creativity and design of his creations. But beyond the icing, they were also satisfied by the cake’s special recipe that, up to now, is a well-guarded family secret.

Having foresight and knowing that the development of his art required the involvement of the younger generation, Dexter trained his sons in the art of cake making and sugar craft. His children Beth, Grace, Ronnie, Raymond, Roland and Roderick, soon acquired their father’s creativity and skill. Not long after, word of the talented baking family spread. And not long after they were teaching their art in different countries around Asia. Dexter’s Bakeshop had found its success and place in the country.

The family further refined their techniques. While working mostly with Royal Icing, they adapted new materials such as marzipan and eventually, fondant. Up to now, their expertise in fondant icing has been unmatched.

Dexter passed away in the 90s, but the legacy of Dexter’s Bakeshop continues to live on. Still run by the Rebolledo family, his wife, Josefina handles the management and operations, while his son, Raymond stands as Creative Director. Together with their entire family, they continue his tradition and success.s
